Night Shirts

Eric and I have a bunch of T-shirts from various things so they're going to good use as night shirts with our girls. We still can't convince Evelyn it's a nightgown and not a dress.

JAM

I remember my childhood days of standing over a pot of boiling berries with tons of sugar and stirring during one of moms great jam making sessions. She made (I guess I should use present tense but I'm talking my memory here) some pretty good jams in bulk--boysenberry, raspberry, pomegranate (I don't remember seeds being an issue); just about any berry she could get. I must say I have not followed suit with the canning skills but thanks to Ball I can still make jam--freezer jam that is. Just blend berries, mix in sugar & pectin, and voila a good batch of jam but of course not as good as mom's. No boiling or sterilizing jars necessary which is right up my alley.

My batch of blackberry jam (thank you Sprouts for cheap produce!)

Three Layer Carrot Cake with Ginger Cream-Cheese Icing

Here is what I made for Alicia on Mother's Day. It turned out pretty good. It was better after being chilled in the fridge and it could have used some rasins. But other than that it's probably the best carrot cake recipe I've tried.

I looked out the window and what did I see?

SNOW!
I know it has snowed May 11/12 in Denver before but it through me and my mood for loop. We actually had a nice rain/snow/hail mixture that kept us homebound for two whole days. Thankfully I haven't planted any warm weather things in my garden yet, that's a project unto itself that will hopefully be done soon.

Mother's Day

It has been a wonderful mother's day today being spoiled with a yummy breakfast in bed (and a tempting carrot cake on the counter Eric made for dessert), gifts made by the kiddos and having them dressed and ready for church without my nagging. I love being a mother to my three girls as they teach me so much. I'm glad they are patient and forgiving of me with my many faults and those days when I'm not in the best of moods. Cheers to mothers and motherhood!

Thanks Eric for sharing this journey with me and being a wonderful father and husband.
